Chickpea salad with Za’atar dressing

Chickpea salad is a fine thing. The salad is made super fast, makes you full, contains a lot of good proteins, is gluten-free and even vegan. These were now so many good qualities that it makes the salad almost unsympathetic 😀 But don’t worry, the taste is definitely there too – and it’s great!

Do you know this too? You look at your calendar in the morning and just think: “So many appointments, where should I sit down and eat something delicious? But before you reach for fast food, prepare this delicious and filling chickpea salad the night before.

Easy Meal Prep

The vegetables are sliced super fast and the dressing is ready to shake in no time. The chickpeas and vegetables are nicely sealed in a fresh-keeping tin and the fantastic Za’atar dressing in a small glass. Then pack both quickly in the morning and have a filling and healthy meal at noon, which won’t send you into a feeding coma. So save the feeding coma for the weekend or an evening on the couch. 😉

The chickpea salad is not only a good filling, but also a good accompaniment to fried fish. When I am on a low carb trip again, I like to treat myself to a salad in the evening with a nice piece of salmon.

Recipe for Chickpea salad

Chickpea salad

Super easy, tasty and healthy.
Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes
Servings: 4 Servings

Ingredients

For the salad

  • 400 g Cooked chickpeas
  • 1/2 Red bell pepper
  • 1/4 Cucumber
  • 1 Tomato
  • 1 Spring onion
  • 1 small bunch flat leaf parsley

For the dressing

  • 1/2 Lemon
  • 6 tbsp Olive oil
  • 2 tsp Za'atar
  • 1 tsp Sumac
  • Salt, pepper

Instructions

For the salad

  • Wash and chop the vegetables.
  • Roughly chop the parsley.
  • Mix the chickpeas with the remaining ingredients.

For the dressing

  • Squeeze the lemon.
  • Mix all ingredients for the dressing.
  • Mix dressing and salad together and season to taste with salt and pepper.
